Each semester the School of Merchandising & Hospitality Management invites a local chef to visit the Club. Students are given the opportunity to work alongside a culinary master preparing an exquisite luncheon
Menu. Guest Chef Day is the most popular day of the semester and is always a sold-out event! Reservations are required for this special day, and the price is an
incredible value at $9.00.

Fall 2009 Guest Chef
Louis Lambert: FORT WORTH, TX. Lou Lambert, chef-proprietor of
the sizzling Lamberts Downtown Barbecue in the heart of Austin and
Lambert's Steaks in Fort Worth, knows food from farm to market- or,
rather, from ranch to culinary academy to refined but unpretentious
restaurant.
Lambert grew up in West Texas and spent summers on
the family cattle ranch, which his family still operates today. When he
got out of high school, Lou went off to Fort Worth to study at Texas
Christian University and then moved to the University of North Texas
where he graduated with a BS in Hotel Restaurant Management. Food was
his passion, so he next studied at The Culinary Institute of America in
Hyde Park, NY where he learned traditional culinary techniques that
remain at the heart of his cuisine.
After culinary school, Lambert worked with several
notable restaurants around the country paying his dues and honing his
craft. Postrio in San Francisco, Cafe Pacific in Dallas, and Crestline
Hotels and Resorts in Mclean, Virginia. Lambert eventually returned to
Texas and settled in Austin, opening the popular Jo's Coffee on South
Congress.
As well as the two Lambert's locations and two Jo's in Austin, Lou operates Dutch's Hamburgers in Fort Worth across from TCU. Lambert’s Steaks was voted by the Dallas Morning News in the "10 Best New Restaurants" in the DFW area. Fort Worth Weekly recently voted Lambert’s "Best Steak", "Best Sunday Brunch", and Lou as "Best Chef" in Fort Worth. Texas Monthly voted Dutch's into the top 10 "Best Burgers" in the state of Texas.
Lambert currently lives in Fort Worth and is a regular guest chef at Central Market and other cooking schools around state. Lou and food writer June Naylor are also currently working on a soon to be published project, Big Ranch Big City Cookbook.

Course 1 - Lambert’s Chopped Salad
Mixed Lettuces with Almonds and Sesame Seeds; tossed with citrus vinaigrette.
Course 2 - Bock Beer Braised Beef Short Ribs
Served with Braised Carrots, Onions, Mushrooms, and a Green Chili Grits Souffle.
Course 3 - Blackberry Cake Cobbler
